Assembly Coffee Roasters was founded by husband and wife Thomas and Julia Doyle with the intention of bringing high quality specialty coffee, and exceptional customer service to wholesale clients in Berkshire County, Southern Vermont, and Eastern New York. Assembly strives to create memorable coffee programs for restaurants, cafes, and bed and breakfasts through roasting and blending coffees in a manner specifically geared to the individual client’s needs.
Thomas Doyle, originally from Southern California, has been roasting coffee for the past decade. Previously, he was the head roaster and operations manager for the industry leading Blue Bottle Coffee in both San Francisco and New York City. Thomas was the fifth employee hired by Blue Bottle, and apprenticed directly under the company’s founder, James Freeman, to learn his craft. At Blue Bottle Thomas was responsible for all things associated with the sourcing, roasting, and distributing coffee; quality control; and the development of new blends.
Julia Doyle, originally from Franklin County, Massachusetts, is a former partner in a New York City design and construction firm, DCR, LLC. At DCR Julia oversaw the creation of some of New York’s finest dining establishments, taking them from raw spaces to functioning restaurants with a focus on fast turn around, tight budgets, and memorable aesthetics. DCR built a reputation for their ability to work with some of the smallest spaces in New York, solving logistical issues around kitchen design, equipment layout, and efficiency in workspaces.
The couple met in 2010 while DCR was designing and building Blue Bottle’s Brooklyn roastery and café. Eager for a better quality of life, the couple relocated to Pittsfield, Massachusetts in 2011 and began planning Assembly Coffee Roasters.
At Assembly, Thomas personally roasts every wholesale batch of coffee to order, to ensure the freshest, and highest quality product possible. Assembly recognizes that each wholesale client is unique, and tailors a program that fits the individual’s needs. Through comprehensive barista training and education, custom roasting, equipment and café layout consulting, Assembly strives to alleviate much of the back-of-house pressure, so the wholesale client can focus on the most important aspect of their business: providing their customers with a transformative and lingering experience.
